Tart-N-Tasty Squirrel

I personally like squirrel slow cooked on the barbecue with a little salt, pepper, and garlic.

However, I use this recipe to please the rest of my family.

Ingredients

3 pounds squirrel, pieced

1/4 cup olive oil

1/2 teaspoon crushed black pepper

1/3 cup fresh lemon juice

1/2 teaspoon sugar

1/4 teaspoon paprika

1/4 teaspoon prepared mustard

1/4 teaspoon salt

1/4 teaspoon celery salt

1/4 teaspoon garlic powder

Season squirrel with salt and pepper. Heat olive oil and brown squirrel. Remove squirrel, drain skillet.

In a mixing bowl combine all remaining ingredients, mix well. Place squirrel back in skillet, add mixture, stir to mix. Cover and simmer for about 45 minutes, serve.

Serve with mashed potatoes or french fries, fresh salad, and hot biscuits.Squirrel recipes?

First, make sure you have removed ALL the skin, nothing worse than getting a bit of squirrel fur in you teeth. Next pop it into a crock pot. Cover with Cream of Mushroom Soup, and simmer for hours. Next, remove it, try to serve it, and then throw it out.

Sorry, if you are serious, the crock pot and mushroom soup is good. I have had rabbit %26amp; dove, fixed that way, and have enjoyed them both.

Crean of Chicken soup is also good for small game.
Try looking through this free E-book, it's got 490 award winning recipes.
I didn't read the recipe .. but you can make squirrel dumplings. It made just like chicken %26amp; dumplings.
I make squirrel and rabbit the same way.My fav.is to parboil it with lots of onions and pickling spice.Drain, rinse and lay on paper towels(I quarter the meat before parboiling)

Fry in part butter and yellow crisco until golden brown.

We use to have squirrel and rabbit feeds all the time. This was everyones favorite.

Serve with a good crusty bread and french fries.

Oh...and soup.........

Enjoy and I hope I have helped you out...

Rabbit

3 lb rabbit, jointed

3 tablespoons olive oil

1 large onion, chopped

1 clove garlic, crushed

4 oz piece raw ham (jamon serrano or prosciutto crudo), diced

2 tablespoons brandy

4 oz button mushrooms

14 oz can chopped tomatoes

6 fl oz red wine

1 bay leaf

2 sprigs fresh thyme

2 sprigs fresh parsley

salt and freshly ground black pepper

chopped parsley, to garnish

Rinse the rabbit pieces thoroughly and dry well with kitchen paper.

Heat 2 tablespoons of the oil in a heavy-based flameproof casserole

and brown the rabbit pieces all over. Remove to a plate. Add the

remaining oil and the onion to the pan and cook over a low heat for

about 10 minutes, until transparent. Stir in the garlic and ham and

cook for 2-3 minutes. Return the rabbit to the casserole. Pour over

the brandy, ignite and shake the pan until the flames die down. Add

the mushrooms and cook for 5 minutes, stirring occasionally. Add the

tomatoes, wine, herbs tied in a bunch, and salt and pepper to taste.

Cover and simmer for 1-1-1/2 hours, until the rabbit is tender. If

necessary, remove the lid towards the end of the cooking to reduce

and thicken the sauce. Transfer to a serving dish and sprinkle with

parsley.

2 1/2 Tb. butter

Roll the squirrel pieces in flour, salt, and pepper. Brown in butter. Add

squirrel and all other ingredients, (with the exception of the tomatoes),

to the boiling water, cover, and simmer for 1/2 to 2 hours. Add the
